Pepper Steak in the Slow Cooker

I just got this recipe along with several others for the crockpot from hubby's work. Last year they started a health campaign at work, and have been passing out recipes, measuring cups, strainers, etc. to promote healthy eating. Which I love! Also set up a discounted membership to the local YMCA, which is still to expensive for us to sign up for. I have a bike and treadmill here at home, along with a library of Walk Away the Pounds Dvds so really don't need that anyway. It just would've been nice to be able to use the weight machines they have. But hey you have to work with what you have. And thankful for the exercise equipment/DVDs I have.

I fixed this tonight and it was a hit, and we have some wonderful leftovers.

Pepper Steak

1 pound of lean stew meat (I used eye of round roast cut into cubes) (it was on sale and is very lean)

1/4 cup flour

2 (15oz.) cans tomato sauce

2 tablespoons worcestershire sauce

heaping 1/2 tsp. garlic powder

2 medium green peppers cut up into what size suits you ( I used 1 green and 1 yellow pepper in mine)

1 large onion , chopped

4 cups cooked rice (I cooked mine with some of the new Swanson Beef stock I found at the store) yummy!

1. Put beef cubes and flour in 2 1/2 Quart crockpot, stir to coat

2. Add tomato sauce, worcestershire sauce, and garlic powder, and stir.

3. Cook on high 3 hours or until meat is tender.

4. In the 3rd hour add the green pepper and onion, stir. Add an additional 30 min. or until the vegs. are crisp-tneder.

5. Serve over hot cooked brown rice.

It was really yummy, and will be making this again. There was a great looking and easy recipe for a White Chicken Chili I also plan on trying this week for the crockpot to. If it turns out I'll post it to. I've never made Chicken Chili before so anxious to try this one. Chili has got to be one of my favorite foods, and it's getting to be that time of year for it.

Thought this was a nice idea!





I loved this idea!! Mainly because this is something I need to STRONGLY work on. I tend to be all over the place, and I don't settle down and read like I know I should. So today, I am making a commitment to God and myself to read his word daily. For myself I plan to alternate between the Old Testament, and New. Start with Genesis, then when finished jump to Matthew. I'm not going to be bound into just three chapters if I'm lead or compelled to read more, but I do like and need some structure.

Clearing out some clutter, cleaning

Been working on the clearing out some of our closet clutter this week. Reorganizing them so they function. LOL! I had some closets that attacked when you opened them. ;) It's weird to find things you forgot you had, and of course say "oh that's where it been all this time." Then again you find so much stuff you don't even need at all. Moving toward living more simply, cleaning out closets is a great thing. I've been taking small steps over the past several years to let go of things. What I'm parting with today, just a year ago I still thought I needed or wanted. And probably in all honesty I didn't need it last year either. But I think everything has a season, and this is a season letting go again.

Also cleaned my oven and gave the dishwasher a good going over. My dishwasher I think is on it's last legs. Hopefully I'll be able to get another one when this finally does go bad. Never been a big hand washing fan, not very efficient either. I seriously believe I use less water with the dishwasher than hand washing, mainly because constantly want to change to new clean water. LOL! Diehard dishwasher fan, and not going to change. :)

After I attack my hall closet, I'm heading to the kitchen cabinets (to clean, reorganize, and inventory), and laundry closet to dust down shelves and clean up the washer and dryer (behind, beneath also).

My main reason for wanting to get to the Kitchen is I want to inventory everything. With the possiblity of my husband being laid off I want to see what we have and figure out what I'd like to stock up on. Also try my hand at some menu planning, something I have not mastered yet. I know I over buy at the store because of this very thing. Ack I don't even know what I have!! LOL! Goes back to those closets that attack, my kitchen cabinets do that to!!!

Hello

Hello, and welcome to my blog. Really this is just a place to post to goings on in my mundane life. Things I'm thinking about, planning trying out, etc.

My name is Kat, I'm 34 years old and married to a wonderful husband. No children, but we have 2 fat lazy cats, that I will probably post pictures and talk about from time to time. LOL! They are my babies. We live in the beautiful state of Kentucky, wouldn't want to live anywhere else.

I'm am striving to know God, and the Bible better. Proud to call myself a Christian (and forever learning). I'm working toward a more simple life, venturing into living Green (concerned not only in the enviroment but also in the frugal/simplicity of it all). So I will probably be writing about the things I'm doing and want to do to accomplish this. My husband and I both dream of living in the country someday. I'm a cooking nut, and have the weight to prove that. So recipes will be a plenty, always trying to find a healthier way to fix something. But also staying as low cost as possible. Not rich here. I'm doing Weight Watchers at home on my own (can't afford to do the meetings at this time). Oh the joys of the ups and downs of a weight loss journey.

Well as you can see I've got alot on my mind...things I want to do, things I want to learn, grow, become who I want and beleive God wants me to be. Hope you will enjoy reading about it. I'm only human, not perfect so all of this is a learning process. My learning process.
